Grilled Zucchini

This easy to make grill recipe is a great summer side dish. Zucchini is sliced lengthwise and marinated with olive oil, balsamic vinegar, oregano, salt and pepper. After marinating, the zucchini is placed on the grill to cook. Extra marinade is drizzled over the grilled zucchini.

Ingredients

  • 4 medium zucchini 2 lbs sliced lengthwise, ¼ inch thick
  • 4 medium yellow squash 2 lbs sliced lengthwise, ¼ inch thick
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ tsp dried oregano
  • Salt and pepper

Instructions

  1. Heat grill to medium. In a large bowl, gently toss zucchini, squash, oil, vinegar and oregano; season with salt and pepper.
