Most Requested Chocolate Cake

This decadent chocolate cake is actually very similar to a chocolate cake a famous restaurant sells. Bakers chocolate is melted and mixed with mayonnaise (it’s the secret ingredient), sugar and vanilla. A flour mixture and boiling water are added to the chocolate mixture; and then the cakes are baked. Chocolate frosting is made using more Bakers chocolate and butter that is mixed with powdered sugar, milk and vanilla.

Ingredients

  • 2 ½ packages (4 oz) for a total of 10 oz Bakers unsweetened chocolate divided
  • 1 ½ cup Miracle Whip dressing
  • 2 ¼ cup packed brown sugar
  • 1 tbsp vanilla divided
  • 3 eggs
  • 2 cups flour
  • 1 ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup boiling water
  • ¼ cup butter
  • 3 cups powdered sugar
  • cup milk

Instructions

  1. Preheat oven to 350 F. Line 2 (9 inch) pans with parchment, spray parchment with cooking spray.

  2. Melt 6 oz chocolate as directed on package; cool.

  3. In a large bowl beat dressing, brown sugar, 2 tsp vanilla with an electric mixer until blended. Beat in eggs and melted chocolate.
  4. In a separate bowl combine flour, baking soda and salt. Add to chocolate mixture alternately with boiling water, mixing well after each addition. Pour into prepared pans.
  5. Bake 30 to 35 minutes or until toothpick comes out clean. Cool 10 minutes in pans. Remove from pans, transfer to wire rack, removing parchment.
  6. Microwave 4 oz chocolate and butter in a large microwavable bowl on HIGH 1 – 1 ½ min or until butter is melted, stirring every 30 seconds. Stir until chocolate is completely melted, cool.

  7. Add powdered sugar, milk and 1 tsp vanilla to butter mixture; beat until blended. Use to fill and frost cake layers.
