Savory Cheese Muffins

I stole this recipe for Savory Cheese Muffins from Recipetineats.com. These delicious muffins are perfect side dish for dinner or tasty addition to breakfast. Flour, baking powder, baking soda and salt are whisked together in a bowl. Then in another bowl egg, milk, sour cream, vegetable oil, parsley and minced garlic are whisked together. Next a well is made in the dry ingredients before adding the wet ingredients. The ingredients are gently mixed together before adding the cheese. Then the batter is scooped into muffin tins and baked. Once removed from the oven, the muffins are brushed with a mixture of butter and garlic. Don’t worry there are no surprise ingredients in these muffins.

The ingredients for this recipe are: 3 tbsp butter, 3 garlic cloves, 2 cups grated cheddar cheese, 2 cups flour, 1 ½ tsp baking powder, ½ tsp baking soda, ½ tsp salt, 1 egg, 1 cup milk, ¼ cup sour cream, ⅓ cup vegetable oil and ¼ cup parsley

Whisk flour, baking powder, baking soda and salt in a bowl.

Then whisk together egg, milk, sour cream, vegetable oil, parsley and minced garlic in a separate bowl.

Make a well in the dry ingredients, then add the wet ingredients. Mix 8 times.

Next add the cheese, mix as few times as possible just to incorporate remaining bits of flour, no more than 7 big stirs.

Divide between 11 muffin tins, using an ice cream scooper.

Bake for 22 to 25 minutes or until the muffins are golden and crusty and spring back when touched in the center.

Remove onto cooling rack, brush with melted butter and cool slightly.

Ingredients

Butter and cheese

  • 3 tbsp butter
  • 2 garlic cloves crushed
  • 2 cups grated cheddar cheese

Dry Ingredients

  • 2 cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet Ingredients

  • 1 egg lightly whisked
  • 1 cup milk
  • ¼ cup sour cream or plain yogurt
  • cup vegetable oil
  • ¼ cup finely chopped parsley
  • 1 garlic clove minced

Instructions

  1. Preheat oven to 350 F.
  2. Place butter and garlic in microwave safe bowl and melt in 30 second bursts. Mix.
  3. Brush muffin tins generously with the butter. Reserve some butter to brush tops.
  4. Whisk dry ingredients in a bowl.
  5. Whisk wet ingredients in a separate bowl.
  6. Pour the wet into the dry ingredients in a bowl. Mix 8 times. Add cheese, mix as few times as possible just to incorporate remaining bits of flour, no more than 7 big stirs.
  7. Divide between 11 muffin tins, using an ice cream scooper.
  8. Bake for 22 to 25 minutes or until the muffins are golden and crusty and spring back when touched in the center.

  9. Remove onto cooling rack, brush with remaining butter (microwave again if needed) and cool slightly.
