Buttermilk Pancakes

I stole this recipe for Buttermilk Pancakes from a cookbook called Taste of Home: Lazy Day Dinners, Desserts & More who stole it from Betty Abrey from Imperial, SK Canada. This easy to make pancake recipe tastes way better than boxed pancake mix. First flour, sugar, baking soda, salt and baking powder are mixed together in a bowl. Then in a separate bowl, eggs and buttermilk are whisked together. Next the wet ingredients are stirred into the dry ingredients. The batter is cooked on a greased hot griddle until golden brown. These pancakes can be served as breakfast or dinner.

The ingredients for this recipe are: 4 cups AP flour, ¼ cup sugar, 2 tsp baking soda, 2 tsp salt, 1 ½ tsp baking powder, 4 large eggs and 4 cups buttermilk

In a large bowl, combine flour, sugar, baking soda, salt and baking powder. If using buttermilk powder add it at this step.

Then in another bowl whisk the eggs and buttermilk until blended; stir into dry ingredients just until moistened.

Pour batter by ¼ cup dosing onto greased hot griddle.

Turn when bubbles form on top. Cook until second side is golden brown.

Serve warm.
