Smothered Beef & Bean Burrito Bake

I stole this recipe for Smothered Beef & Bean Burrito Bake from southyourmouth.com. These burritos are a tasty dinner option. Enchilada sauce is poured into the bottom of a baking dish. Ground beef and onions are cooked together in a skillet. Then refried beans, taco seasoning and spices are added to the beef. Next shredded cheddar cheese is added before splitting up the mixture between burrito size tortillas to make six burritos. The burritos are placed in the pan and brushed with enchilada sauce. Additional cheddar cheese is sprinkled on top before covering and baking until the cheese is melted. You can add any additional spice or ingredients to these burritos to customize them, no matter how many times you make it.

The ingredients for this recipe are: 2 lbs ground beef, 1 large onion, 16 oz can refried beans, 1 packet taco seasoning, 1 tsp garlic, 1 tsp oregano, 1 tsp cumin, ½ tsp salt, ½ tsp pepper, 2 (10 oz) cans enchilada sauce, 1 lb white American cheese and 6 large (burrito size) flour tortillas

Brown and crumble beef with onions over high heat in a large skillet.

Cook until beef is cooked through; drain fat.

Then add refried beans, taco seasoning and remaining spices to skillet then stir well.

Remove from heat to cool a little. Shred cheese then add 1 cup to beef and bean mixture; stir to combine.

Pour 1 can of enchilada sauce in the bottom of the baking dish then spread evenly.

Arrange tortillas on a clean work surface then divide meat filling evenly in the center of each. Place filling into a loaf 4 to 5 inches long, keeping the filling centered left to right.

Fold the sides over the filling then fold the bottom up to cover the filling. Roll the tortilla away from you to create a burrito. Place each burrito seam side down into the baking dish.

Slowly drizzle remaining can of enchilada sauce over the burritos, taking care to cover tortilla. Then if needed, use a pastry brush to spread the sauce over any “dry” areas.

Next top each burrito remaining cheese.

Cover dish with foil, tenting the foil if necessary to ensure it doesn’t stick to the cheese. Bake at 375 F for 35 to 45 minutes or until cheese is completely melted and sauce is bubbly.

Serve with salsa, sour cream, more cheese or lettuce.

  2. Pour 1 can of enchilada sauce in the bottom of the baking dish then spread evenly.

Place filling into a loaf 4 to 5 inches long, keeping the filling centered left to right. Fold the sides over the filling then fold the bottom up to cover the filling.
