Marry Me Tortellini

First garlic, sun dried tomatoes and Italian seasoning are cooked in olive oil. Then flour is added to make a roux. Next vegetable broth is added with tortellini. Heavy cream, Parmesan cheese and spinach are added once the tortellini is cooked. This delicious recipe is tasty hot from the skillet or cold from the refrigerator on a summer day.

The ingredients for this recipe are: 2 tbsp olive oil, 6 garlic cloves, ½ cup sun dried tomatoes in oil, 1 tsp Italian seasoning, 2 tbsp flour, 2 cups vegetable broth, 20 oz fresh cheese tortellini, ½ cup heavy cream, 2 cups fresh spinach and 1 cup parmigiano

Add olive oil, garlic, sun dried tomatoes (and their oil), Italian seasoning and red pepper flakes to a heavy bottomed pot.

Cook for 3 to 4 minutes or until garlic is tender and fragrant. Then add flour and cook for 3 minutes to create a roux.

Next add in the broth and bring to a boil.

Let the mixture thicken for 3 to 5 minutes then add the tortellini and pinch of salt and stir.

Turn off the heat and add the spinach.

Then add in the heavy cream and parmigano.

Stir until the cheese is melted.

Season with salt and pepper to taste before serving.

  • 2 tbsp flour
  • 2 cups vegetable broth
  • 20 oz fresh cheese tortellini 5 cups
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • 1 cup parmigiano

Instructions

  1. Add olive oil, garlic, sun dried tomatoes (and their oil), Italian seasoning and red pepper flakes to a heavy bottomed pot.

Recipe Notes

If too dry, add ½ cup more stock or extra cream.
