This delicious pasta recipe can be a main dish or side dish. First garlic, sun dried tomatoes and Italian seasoning are cooked in olive oil. Then flour is added to make a roux. Next vegetable broth is added with tortellini. Heavy cream, Parmesan cheese and spinach are added once the tortellini is cooked.

2tbspolive oil
6garlic clovesminced
½cupsun dried tomatoes in oil
1tspItalian seasoning
1pinchred pepper flakes
2tbspflour
2cupsvegetable broth
20ozfresh cheese tortellini5 cups
½cupheavy cream
2cupsfresh spinach
1cupparmigiano
Instructions
Add olive oil, garlic, sun dried tomatoes (and their oil), Italian seasoning and red pepper flakes to a heavy bottomed pot.
Cook for 3 to 4 minutes or until garlic is tender and fragrant.
Add flour and cook for 3 minutes to create a roux.
Add in the broth and bring to a boil. Let the mixture thicken for 3 to 5 minutes then add the tortellini and pinch of salt and stir.
Turn off the heat and add in the heavy cream, parmigano and spinach and stir once more until the spinach is wilted.
