
I stole this recipe for Mexican Coleslaw from lemontreedwelling.com. This quick and easy to make coleslaw is a perfect side dish for any Mexican entrée. Coleslaw mix is combined with chopped tomatoes, black beans, corn, cilantro and minced jalapeno. Then in a small bowl mayonnaise, sour cream, taco seasoning and lime juice are mixed together. Next the mayonnaise mixture is added to the coleslaw mixture. The coleslaw is refrigerated until ready to serve. This coleslaw is a tasty treat for any coleslaw fan.

The ingredients for this recipe are: 14 oz bag coleslaw mix, ½ cup red pepper or tomatoes, ½ cup black beans, ½ cup corn, ½ cup chopped cilantro, 1 jalapeno, ¾ cup mayonnaise, ¼ cup sour cream, 1 ½ tbsp taco seasoning and 2 tbsp lime juice

Cook the corn in a skillet until it is charred.

In a small bowl, add the mayonnaise, sour cream, taco seasoning and lime juice.

Whisk until smooth.

In a large mixing bowl, combine the coleslaw mix, tomatoes, black beans, grilled corn, cilantro and jalapeno.

Toss the ingredients ingredients then add the mayo mixture to the coleslaw mixture.

Stir well to combine the ingredients with the mayonnaise mixture.

Cover and refrigerate until ready to serve.
