Mexican Coleslaw

This quick and easy to make coleslaw is a perfect side dish for any Mexican entrée. Coleslaw mix is combined with chopped tomatoes, black beans, corn, cilantro and minced jalapeno. Then in a small bowl mayonnaise, sour cream, taco seasoning and lime juice are mixed together. Next the mayonnaise mixture is added to the coleslaw mixture. The coleslaw is refrigerated until ready to serve.

Ingredients

  • 14 oz bag coleslaw mix
  • ½ cup red pepper or tomatoes diced
  • ½ cup black beans drained and rinsed
  • ½ cup corn charred
  • ½ cup chopped cilantro
  • 1 jalapeno minced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 1 ½ tbsp taco seasoning
  • 2 tbsp lime juice

Instructions

  1. In a large mixing bowl, combine the coleslaw mix, tomatoes, black beans, grilled corn, cilantro and jalapeno.
  2. In a small bowl, whisk together the mayonnaise, sour cream, taco seasoning and lime juice.
  3. Add the mayo mixture to the coleslaw mixture and stir to combine.
  4. Cover and refrigerate until ready to serve.
