I stole this recipe for Shredded Chicken Quesadillas from a cookbook called The Easy 5 Ingredients Slow Cooker Cookbook. This slow cooker recipe is a delicious game day meal option and can be easily doubled for a large crowd. Chicken is placed in a slow cooker, then seasoned with salt and pepper. Next canned tomatoes with green chiles are added with taco seasoning and garlic powder. After cooking for several hours the chicken is shredded. Then the chicken is placed in tortillas with shredded cheese and cooked in a skillet. These quesadillas are a tasty way to mix up Taco Tuesdays.

The ingredients for this recipe are: 2 lb chicken breasts, salt, black pepper, 10 oz can diced tomatoes with green chiles, 1 tsp ground cumin or taco seasoning, 1 tsp garlic powder, flour tortillas and shredded cheese

Put chicken in a slow cooker. Add tomatoes with their juices over the chicken.

Then in a small bowl add the taco seasoning, garlic powder, salt and pepper. If doubling the recipe add 15 oz taco sauce.

Mix the sauce and spices together and pour over the chicken.

Spread the sauce mixture on top of the chicken.

Cover and cook on LOW for 6 hours or until chicken is tender.

Remove chicken and shred. Return chicken to slow cooker and stir.

Place shredded cheese on half of a tortilla, then add some of the shredded chicken.

Add more cheese on top of the chicken.

Close and cook the quesadilla until the cheese is melted and the tortilla is crispy.

Shredded Chicken Quesadillas
Ingredients
- 2 lb chicken trimmed of fat
- Salt
- Black pepper
- 10 oz can diced tomatoes with green chiles
- 1 tsp ground cumin or taco seasoning
- 1 tsp garlic powder
- Flour tortillas
- Shredded cheese sour, guacamole, lettuce, tomatoes
Instructions

Put chicken in a slow cooker. Season with salt and pepper. Add tomatoes with their juices, cumin and garlic powder. Stir to combine.

Cover and cook on LOW for 6 hours or until chicken is tender.

Remove chicken and shred. Return chicken to slow cooker and stir. Season with additional salt and pepper if needed.

Make quesadillas with shredded cheese and tortillas on a griddle.
Recipe Notes
If doubling the recipe use 1 can of diced tomatoes and 10 oz of jarred taco sauce.
