Shredded Chicken Quesadillas

Chicken is placed in a slow cooker, then seasoned with salt and pepper. Next canned tomatoes with green chiles are added with taco seasoning and garlic powder. After cooking for several hours the chicken is shredded. Then the chicken is placed in tortillas with shredded cheese and cooked in a skillet.

Ingredients

  • 2 lb chicken trimmed of fat
  • Salt
  • Black pepper
  • 10 oz can diced tomatoes with green chiles
  • 1 tsp ground cumin or taco seasoning
  • 1 tsp garlic powder
  • Flour tortillas
  • Shredded cheese sour, guacamole, lettuce, tomatoes

Instructions

  1. Put chicken in a slow cooker. Season with salt and pepper. Add tomatoes with their juices, cumin and garlic powder. Stir to combine.
  2. Cover and cook on LOW for 6 hours or until chicken is tender.
  3. Remove chicken and shred. Return chicken to slow cooker and stir. Season with additional salt and pepper if needed.
  4. Make quesadillas with shredded cheese and tortillas on a griddle.

Recipe Notes

If doubling the recipe use 1 can of diced tomatoes and 10 oz of jarred taco sauce.
