I stole this recipe for White Chocolate Cranberry Bars from a cookbook called Christmas Cookie Swap! More Than 100 Treats to Share This Holiday Season. These cookie bars are another delicious holiday cookie recipe. Butter and brown sugar are beaten together before adding eggs and vanilla. Then flour, baking powder and salt are added to the batter. Next white chocolate chips, walnuts and dried cranberries are folded into the batter before is spread into a baking dish. The cookie cut in the pan until golden, then are cut into bars once completely cooled. Because these cookies are cut into bars, no cookie cutters are needed.
The ingredients for this recipe are: 1 cup butter, 2 cups packed brown sugar, 2 eggs, 2 tsp vanilla extract, 2 cups flour, ½ tsp baking powder, ¼ tsp salt, 1 cup white chocolate morsels, 1 cup chopped walnuts and ¾ cup sweetened dried cranberries
Beat the butter and brown sugar at medium speed until well blended. Then beat in the eggs and vanilla.
Next add in the flour, baking powder and salt, beating at low speed until blended.
Stir in the white chocolate morsels, nuts and cranberries.
Line the bottom and sides of 9×13 baking pan with foil, allowing 2 to 3 inches to extend over the sides. Coat the foil with cooking spray. Spread the batter into the prepared pan.
Bake at 350 F for 30 to 35 minutes or until golden brown and set.
Lift the bars from the pan, using the foil sides as handles; gently remove the foil. Cut into 6×4 rows.
Drizzle the cut bars with melted white chocolate if desired.
