White Chocolate Cranberry Bars

These cookie bars are another delicious holiday cookie recipe. Butter and brown sugar are beaten together before adding eggs and vanilla. Then flour, baking powder and salt are added to the batter. Next white chocolate chips, walnuts and dried cranberries are folded into the batter before is spread into a baking dish. The cookie cut in the pan until golden, then are cut into bars once completely cooled.

Ingredients

  • 1 cup butter softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup white chocolate morsels
  • 1 cup chopped walnuts
  • ¾ cup sweetened dried cranberries

Instructions

  1. Preheat oven to 350 F. Line the bottom and sides of 9x13 baking pan with foil, allowing 2 to 3 inches to extend over the sides. Coat the foil with cooking spray.
  2. Beat the butter and brown sugar at medium speed until well blended. Beat in the eggs and vanilla. Beat in the flour, baking powder and salt, beating at low speed until blended. Stir in the morsels, walnuts and cranberries. Spread into the prepared pan.
  3. Bake for 30 to 35 minutes or until golden brown and set. Cool in pan on wire rack for 20 minutes.
  4. Lift the bars from the pan, using the foil sides as handles; gently remove the foil. Cut into 6x4 rows.
