Slow Cooker Beef and Broccoli Ramen

I stole this recipe for Slow Cooker Beef and Broccoli Ramen from lifewiththecrustcutoff.com. This slow cooker recipe is a delicious take out fake out. Sliced beef steak and carrots are placed in a slow cooker. Then in a mixing bowl beef broth, soy sauce, brown sugar, sesame oil, garlic, green onions and cornstarch are mixed together. Next the sauce is poured in the slow cooker and cooked for 6 six hours. When there are 30 minutes left in the cooking time, chopped broccoli and ramen noodles are added to the slow cooker. Then the mixture is cooked until the noodles are tender. The finished recipe is served with sesame seeds and green onions. This recipe is so flavorful that the even broccoli haters will like it.

The ingredients for this recipe are: 1 ½ lbs steak, 1 red pepper (or sub 2 carrots), 1 cup beef broth, ½ cup low sodium soy sauce, ½ cup brown sugar, 3 tbsp sesame oil, ½ tsp red pepper flakes, 3 cloves garlic, 3 green onions, 2 tbsp cornstarch, 2 cups broccoli and 2 packets ramen noodles

Place the sliced beef and red pepper (or carrots) slices into a slow cooker.

In a mixing bowl, combine the beef broth, soy sauce and cornstarch and whisk until the cornstarch is dissolved.

Then add the brown sugar, sesame oil, red pepper flakes, minced garlic and sliced green onions.

Pour the sauce over the beef and vegetables.

Gently stir to mix all ingredients together.

Cover and cook on LOW for 4 to 6 hours until the beef is tender.

When there are 30 minutes before serving add the broccoli to the slow cooker.

Then add the uncooked ramen noodle bricks to the slow cooker.

Next cook while stirring frequently until the noodles are tender.

Garnish with sesame seeds and more green onions.

  • 1 cup beef broth

  • 3 green onions sliced
  • 2 tbsp cornstarch
  • 2 cups broccoli
  • 2 packets ramen noodles
  • Sesame seeds

Instructions

  1. Place the beef and red pepper slices into a slow cooker.
  2. In a mixing bowl, combine the beef broth, soy sauce, brown sugar, sesame oil, red pepper flakes, garlic, green onions and cornstarch.
  3. Pour the sauce over the beef and vegetables.
  4. Cover and cook on LOW for 4 to 6 hours until the beef is tender.
  5. 30 minutes before serving add the broccoli and ramen noodles, stirring frequently until the noodles are tender.
  6. Garnish with sesame seeds and more scallions.

Recipe Notes

I substitute the red pepper with carrots.
