Hash Brown Breakfast Pizza

I stole this recipe for Hash Brown Breakfast Pizza from plainchicken.com. This breakfast recipe is easy to make and large enough for a crowd. Shredded hash brown potatoes are arranged in a single layer on a baking sheet. The potatoes are baked for 10 minutes, then flatten with a spoon and spread to cover the entire pan, seasoned and baked until crispy. Next eggs are scrambled on the stovetop and set aside. Once the potatoes are ready, they are topped with shredded cheddar cheese, scrambled eggs, crumbled bacon and then topped with more cheese. Then the pizza is baked until the cheese is melted. This recipe is perfect for someone who dreams of eating pizza at every meal.

The ingredients for this recipe are: 30 oz frozen Golden Crispy Crowns (shredded hash browns), Salt, Pepper, 2 tbsp butter, 8 large eggs, 2 cups shredded cheddar cheese and 8 slices bacon, cooked and crumbled

Spray 15×10 rimmed baking sheet with nonstick cooking spray. Arrange potatoes in a single layer.

Bake for 10 minutes. Using a wooden spoon or the bottom of a measuring cup, flatten the potatoes and cover the entire pan. Sprinkle with salt and pepper over the crust. Then bake for 20 to 25 minutes, until crispy.

While the potatoes are baking, cook the bacon and set aside to drain on a paper towel line plate.

Next melt the butter in a large skillet over medium-high heat. Add the beaten eggs and scramble. Set aside.

Top the crust with half of the shredded cheese. Add the scrambled eggs and bacon pieces.

Then top the pizza with the remaining cheese.

Bake for 10 minutes, until cheese has melted.

Slice and enjoy!

  1. Preheat oven to 450 F.
  2. Spray 15×10 rimmed baking sheet with nonstick cooking spray. Arrange potatoes in a single layer. Bake for 10 minutes.
  3. Remove the pan from the oven. Using a wooden spoon or the bottom of a measuring cup, flatten the potatoes and cover the entire pan. Sprinkle with salt and pepper over the crust.
  4. Bake for 20 to 25 minutes, until crispy.

Recipe Notes

Make Ahead: Prepare the crust and assemble the pizza. Cover and refrigerate overnight before baking. May need an additional few minutes of cooking time to melt the cheese.
