Teriyaki Chicken Skewers

I stole this recipe for Teriyaki Chicken Skewers from amandacooksandstyles.com. These chicken skewers are a delicious option to grill for Labor Day weekend. The marinade for this recipe starts as a cooked sauce. Brown sugar, soy sauce, vinegar, ginger, honey, sesame oil, cornstarch and water cook together in a saucepan until thickened. Then the sauce is left to cool. Once cooled cubed chicken is marinated in half of the sauce. When ready to grill the chicken is placed on skewers. Next the skewers are grilled and basted with the remaining sauce. The finished chicken is served with any leftover teriyaki sauce, green onions and sesame seeds.

The ingredients for this recipe are: 2 lbs chicken breasts or thighs, 2 tbsp cornstarch, 1 cup water, ⅓ cup brown sugar, ⅓ cup soy sauce, 2 cloves garlic, 1 tbsp rice vinegar, 1 ½ tsp fresh ginger, 1 tbsp honey and ½ tsp sesame oil

In a medium saucepan, add brown sugar, soy sauce, garlic, vinegar, ginger, honey and sesame oil.

Combine cornstarch and water in a small bowl and then add to the saucepan.

Stirring frequently, bring the sauce to a simmer. Cook until lightly thickens. Once the sauce has thickened up, remove from heat and let cool completely.

Once the sauce is completely cooked, place the cubed chicken in a large Ziploc bag. Pour half of the sauce over the chicken and gently shake to coat chicken. Let chicken marinade in the fridge for at least 30 minutes.

When the chicken is done marinating, place chicken on skewers and heat the grill to medium heat. Once the grill is hot, place the skewers on lightly oiled grill.

Turn the skewers every 3 to 4 minutes until the chicken is cooked through, about 20 to 30 minutes. Baste the chicken at every turn.

Remove skewers from the grill and serve with chopped green onions and sprinkle of sesame seeds.

Instructions

  2. Stirring frequently, bring the sauce to a simmer. Cook until lightly thickens. Sauce will be dark brown. Once the sauce has thickened up, remove from heat and let cool completely. Can place in fridge to speed up cooling.
  3. Once the sauce is completely cooked, place the cubed chicken in a large Ziploc bag. Pour half of the sauce over the chicken and gently shake to coat chicken. Let chicken marinade in the fridge for at least 30 minutes. Place the remaining sauce for later.
  4. When the chicken is done marinating, place chicken on skewers and heat the grill to medium heat.
