Parmesan Oven Baked Tomatoes

I stole this recipe for Parmesan Oven Baked Tomatoes from spendwithpennies.com. This tasty vegetable side dish is baked in the oven. Tomatoes are cut in half and placed in a baking dish. Then breadcrumbs, Parmesan cheese, garlic, olive oil, seasonings, salt and pepper are mixed together in a small bowl. Next the tomatoes are topped with the breadcrumb mixture. The tomatoes are baked for ten minutes, then mozzarella or Parmesan cheese is sprinkled on top and baked until the cheese is melted. This recipe works great with any variety of tomatoes you like.

The ingredients for this recipe are: 3 large tomatoes, ¾ cup fresh bread crumbs, ¼ cup Parmesan cheese, 1 clove garlic, 1 tbsp olive oil, ½ tsp dried parsley, ½ tsp dried basil, ½ tsp dried dill, salt and pepper

Preheat oven to 400 F. Then slice the tomatoes in half. Place sliced tomatoes in shallow baking dish, season with salt and pepper.

Next in a small bowl, combine breadcrumbs, cheese, garlic, olive oil, seasonings, salt and pepper. Toss until well mixed.

Top the tomatoes with breadcrumb mixture.

Bake for 10 minutes or until crumbs are lightly browned.

Sprinkle the tomatoes with shredded mozzarella or Parmesan cheese.

Bake for an additional 5 minutes or until the cheese is melted.
