Parmesan Oven Baked Tomatoes

This tasty vegetable side dish is baked in the oven. Tomatoes are cut in half and placed in a baking dish. Then breadcrumbs, Parmesan cheese, garlic, olive oil, seasonings, salt and pepper are mixed together in a small bowl. Next the tomatoes are topped with the breadcrumb mixture. The tomatoes are baked for ten minutes, then mozzarella or Parmesan cheese is sprinkled on top and baked until the cheese is melted.

Servings 6 people

Ingredients

  • 3 large tomatoes halved
  • ¾ cup fresh bread crumbs
  • ¼ cup Parmesan cheese freshly grated
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • ½ tsp dried parsley
  • ½ tsp dried basil
  • ½ tsp dried dill
  • Salt and pepper

Instructions

  1. Preheat oven to 400 F.
  2. In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, seasonings, salt and pepper. Toss until well mixed.
  3. Place sliced tomatoes in shallow baking dish, season with salt and pepper. Top with breadcrumb mixture.
  4. Bake for 10 to 15 minutes or until crumbs are lightly browned. Don’t over baked.
  5. Top with shredded mozzarella cheese before baking.
