I stole this recipe for Rustic Garlic Parmesan Herb Bread from thestayathomechef.com who stole it from The Craft Patch’s who called it Rustic Rosemary Bread. This yeast bread is considered rustic because the dough is shaped into loaves and not baked in a loaf pan. Yeast is mixed with sugar and water. After the yeast blooms, salt, dried herbs and minced garlic are stirred in. Then flour and Parmesan cheese are mixed in until the dough forms. Next the dough rises until doubles and is then shaped into loaves and left to rise again on a baking sheet. Melted butter is brushed on the loaves before baking.

The ingredients for this recipe are: 2 tbsp instant dry yeast, 2 tbsp sugar, 2 cups warm water, 2 tsp salt, 4 tsp dried rosemary, 2 tsp dried basil, 2 tsp dried oregano, 12 cloves minced garlic, 4 to 5 cups AP flour, ⅔ cup grated Parmesan cheese, 4 tbsp olive oil and 2 tbsp butter
In a large mixing bowl add yeast, sugar and water. Then stir in salt, rosemary, basil, oregano and garlic. (I do not use 12 cloves of garlic, I use only 3.)
Next add in 4 cups flour and the Parmesan cheese and stir until combined.
Gradually add in the remaining ½ to 1 cup flour (if needed) until you have a smooth and elastic dough that is tacky, but doesn’t stick to your hands.
Transfer to a lightly greased mixing bowl, cover and let rise until double in size, about 1 hour. Then preheat oven to 375 F. Drizzle baking sheet with olive oil. Divide the dough into 4 and shape into separate round loaves. Place loaves onto the prepared baking sheet.
Next let rise another 15 to 20 minutes. Top each loaf with ½ tbsp melted butter. Bake at 375 F for 18-20 minutes, until golden brown.
Then slice and enjoy!
