Sausage Quiche

I stole this recipe for Sausage Quiche fromjimmydean.com. This breakfast casserole is quick and easy to make. Sausage is cooked in a skillet and then drained. The sausage is placed in a greased baking dish, then topped with sliced green onions and shredded cheese. A mixture of beaten eggs, milk and Bisquick baking mix is poured over the cheese. Next the casserole is baked in the oven until golden brown. Yet another tasty way to have eggs for breakfast.

For this recipe you will need: 1 package Premium Pork Regular Sausage, 4 sliced green onions, 1 cup shredded cheddar cheese, 4 eggs, 2 cups half-half or milk and 1 cup all-purpose baking mix (Bisquick).

Start with cooking the crumbled sausage in a skillet. Then drain the grease from the cooked sausage. (If the sausage is in link form, remove from casings before cooking.)

Preheat the oven to 400 F. Next, place the sausage in a lightly greased 13×9 baking pan; top with sliced green onions and shredded cheese.

In a medium bowl beat the eggs, half and half (or milk) and the Bisquick baking mix with a wire whisk until well blended.

Then pour the Bisquick mixture over the cheese in the baking dish. Smooth out batter with a spoon if needed.

Bake in the oven for 20-25 minutes or until a knife inserted in center comes out clean. The edges should just be staring to turn brown, be careful not to overcook.

Cool for 5 minutes. Then cut the cooked quiche into 12 squares. Top with your choice of toppings, like parsley, salsa, sour cream or fresh tomatoes.
