I stole this recipe for Better Than Fried Shrimp from tasteofhome.com who stole if from Cher Shwartz from Ellisville, MO. The name says it all! Shrimp is dipped in a seasoned flour mixture, then in egg whites and then in Panko bread crumbs. Then the breaded shrimp are placed on a cooking and baked until golden. These shrimp are tasty enough to be eaten with or without cocktail sauce. I recommend using raw shrimp for best results; you can use fresh or frozen and then thawed raw shrimp.
For this recipe you will need 1 ½ cups panko bread crumbs, 2 large egg whites, 1 tbsp fat-free milk, 3 tbsp flour, 3 tsp seafood seasoning (Old-Bay), ¼ tsp salt and ¼ tsp pepper.
Place breadcrumbs in a shallow bowl. Then in another shallow bowl, combine egg whites and milk. Next, in a third bowl combine flour, seafood seasoning, salt and pepper.
Arrange the bowls in order of flour mixture, egg mixture and then bread crumbs. This will make it easier for you when you start breading the shrimp.
Peel and devein 30 uncooked large shrimp. Then dip the shrimp in the flour mixture first.
Turn the shrimp to coat both sides in flour. Then dip the shrimp in the egg white mixture, and then in the bread crumbs. Place the breaded shrimp on a lined baking sheet that has been sprayed with non-stick spray.
Repeat with remaining shrimp. Spray the shrimp with cooking spray (this will help make the breadcrumbs crispy). Bake at 400 F for 8-12 minutes or until shrimp turn pink and coating is golden brown; turning once halfway through baking.
