I stole this recipe for Crackle Brownie Cookies from cincyshopper.com. These easy to make cookies get help from boxed brownie mix. Flour, eggs, water and vegetable oil are added to the dry brownie mix. Chocolate chips are gently folded into the batter. After mixing, scoop some dough with a cookie scoop. Then the scooped dough is rolled in powdered sugar before baking. As these brownie cookies bake the powdered sugar coating cracks. This recipe is a delicious way to make your kitchen smell like brownies.
Grease a cookie sheet, set aside. (I prefer to use a parchment lined cookie sheet.) Preheat the oven to 350 F. In a large bowl, combine 1 box (18.3 oz) fudge brownie mix, 1 ¼ cups flour, 3 eggs, 1 tbsp water and ⅓ cup vegetable oil.
Stir until well blended using an electric mixer or a heavy whisk. The batter will be thick. Then, fold in 1 cup semisweet chocolate chips.
Next, place ¾ cup powdered sugar in a shallow dish or bowl. Then drop 1 tbsp dough into sugar. (To make the cookies all the same size, I use a cookie scoop to portion out the dough instead of using a tablespoon.)
Then, roll the dough in the sugar to coat. (You want the cookie dough ball to be completely covered in powdered sugar.) Next, place 2 inches apart on prepared sheet.
Then, bake 10 to 12 minutes or until set.
Remove the cookies from pan to wire racks to cool. Then enjoy these tasty cookies!
