French Onion Gnocchi Casserole

I stole this recipe for French Onion Gnocchi Casserole from climbinggriermountain.com. This pasta dish tastes like French Onion Soup! Onions are sautéed in a skillet with sugar, Worcestershire sauce, thyme, salt and pepper. Beef broth is added in next and the onions simmer until caramelized. Cooked gnocchi is placed in a casserole dish. A white sauce is made with flour, butter and milk. The onions are placed over the gnocchi, then the white sauce is poured on top and mozzarella cheese is sprinkled on last. This dish is baked until the cheese is golden brown. Caramelizing onions gives this dish the classic French Onion Soup flavor.

Preheat oven to 400 F. In a large skillet, melt 2 tbsp butter over medium-high heat. Once melted, add 1 large yellow onion, thinly sliced. Let the onion slices sauté for about 2 minutes.

Next add 2 tsp granulated sugar, 1 tsp Worcestershire sauce, 1 ½ tsp fresh thyme, salt and pepper. Continue to cook the onions for another minute or 2 and then add ½ cup beef broth. Scraping the bottom of the skillet, making sure everything is well combined, turn the heat to simmer. Stir the onions, to keep from burning, until golden brown, about 20 minutes. Set aside.

Cook 1 package (2 cups) gnocchi in salted water. Drain and add to a 9×13 baking dish. Place onions over gnocchi.

In a saucepan, melt 3 tbsp butter over medium heat. Next add 3 tbsp flour and whisk until a roux forms, about 1 minute.

Pour in 1 ½ cups whole milk and whisk until thickened, about 5 minutes. Add salt and pepper to taste.

Pour the white sauce over the onions, followed by 1 cup shredded mozzarella.

Bake 10 to 15 minutes or until cheese has turned golden brown.

Scoop out the gnocchi, making sure to get some onions, and serve warm.
