I stole this recipe for Sausage, Egg & Cheese Biscuit Casserole from Thecountrycook.net. Biscuits & gravy are made into a casserole! Refrigerated biscuits are cut into small pieces and placed in a baking dish. Breakfast sausage is sprinkled on top with shredded cheddar cheese. Whisked eggs and milk are poured over the cheese. A packet of country gravy is mixed with water and poured over the eggs. After covering the dish with foil, the casserole is baked for 50 minutes. This recipe tastes like biscuits and gravy, but can be assembled the night before for an easy holiday breakfast.
“A positive attitude and a sense of humor go together like biscuits and gravy.” – Dolly Parton, Singer (see more quotes in the Quotes tab)
Cook 1 lb sausage in a skillet and crumble it.
Preheat oven to 350 F. Spray 9×13 baking dish with cooking spray. Cut each biscuit from a 16 oz can jumbo buttermilk biscuits into eighths. Line the bottom of the baking dish with biscuits.
Sprinkle cooked sausage evenly over the biscuits.
Next, sprinkle 2 cups Colby Jack shredded cheese over sausage. In a medium bowl, whisk together 6 large eggs with ½ cup milk for 2 minutes. Season with a pinch of salt and pepper. Pour egg mixture over the cheese layer.
In a separate bowl, combine packet of gravy with 2 cups water. Whisk until combined.
Finally, pour gravy over egg layer.
Cover the dish with foil and bake for 45-55 minutes.
Slice and serve.
