I stole this recipe for Creamy Garlic and Brie Mushrooms from closetcooking.com. Melted brie adds a rich creaminess to this vegetable side dish. Fresh mushrooms are cooked until they are tender. Garlic is added next and cooks for a minute before vegetable broth and diced brie is added to the pan. The brie melts and makes a creamy sauce with the broth. This is an easy to prepare vegetable dish that looks fancy enough for a holiday. The cheese lover in your family will love this dish!
Heat 1 tbsp butter in a pan over medium heat, add 1 lb mushrooms.
Cook until the mushrooms are tender and release their liquids, about 10 -15 minutes. Then add 2 cloves garlic, chopped.
Next add ¼ cup vegetable broth and 4 oz diced brie.
Cook until the brie has melted before seasoning with salt and pepper. Finish with chopped parsley and a splash of lemon juice for a hint of pure freshness.
Serve warm.
