I stole this recipe for Cheesy Garlic Zucchini Rice from damndelicious.net. This easy to make side dish combines a vegetable and a starch. Rice cooks in vegetable broth instead of water. After the rice is cooked and has absorbed most of the broth, shredded zucchini and shredded cheddar cheese is added. Salt and pepper are added before serving. This is a more flavorful alternative to plain white rice.

Shred 2 zucchini and set aside to drain. Press out as much water as you can.
Melt 2 tbsp butter in a large saucepan over medium-high heat. Add 3 minced cloves of garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes.
Stir in 2 cups vegetable broth and 1 cup rice.
Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 15 – 20 minutes.
Remove from heat and add in zucchini and 1 cup shredded cheddar cheese; season with salt and pepper.
Stir to combine all ingredients. Cover and let stand until cheese has melted, about 3-5 minutes.
Serve warm.

- 2 zucchini shredded
