This easy to make side dish combines a vegetable and a starch. Rice cooks in vegetable broth instead of water. After the rice is cooked and has absorbed most of the broth, shredded zucchini and shredded cheddar cheese is added. Salt and pepper are added before serving. This is a more flavorful alternative to plain white rice.

Instructions
Melt butter in a large saucepan over medium-high heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes.
Stir in vegetable broth and rice. Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 15 – 20 minutes.
Remove from heat and stir in zucchini and cheese; season with salt and pepper. Cover and let stand until cheese has melted, about 3-5 minutes.
