Puffed Oven Pancake with Glazed Apples

I stole this recipe for Puffed Oven Pancake with Glazed Apples from a cookbook called Better Homes & Garden: 13 x 9 the Pan that Can. To start this fancy pancake, butter is placed in the bottom of a 9×13 baking pan and baked until it melts. An easy batter is made with eggs, flour, milk and salt. The batter is poured into the hot pan and baked. It puffs up while baking in the oven. While the pancake bakes, glazed apples are made by cooking sliced apples in a skillet with brown sugar and apple juice. Topping the cooked pancake are the glazed apples and powdered sugar. Pieces are sliced from the whole pancake when serving. This is a sweet and decadent twist on traditional pancakes.

Preheat oven to 400 F. Place 2 tbsp butter in 13×9 pan. Place pan in oven 3 to 5 minutes or until the butter is melted. In a bowl beat 4 eggs with a wire whisk. Add in ⅔ cup flour, ⅔ cup milk and ¼ tsp salt.

Whisk the ingredients together and immediately pour batter into the hot pan.

Bake 20 to 25 minutes or until puffed and well browned. Meanwhile, for glazed apples, in a large skillet melt the ½ cup butter over medium heat, add 2 apples that have been peeled and thinly sliced.

Cook and stir about 8 minutes or until apples are tender. Stir in ⅓ cup packed brown sugar; cook 1 to 2 minutes or until sauce is smooth, stirring gently. Remove skillet from heat. Carefully stir in 2 tbsp apple juice. Return skillet to heat; heat through.

Remove cooked pancake from oven.

Serve glazed apples over pancake.

Cut pancake into squares to serve. Sprinkle with powdered sugar. Serve warm.
