Puffed Oven Pancake with Glazed Apples

To start this fancy pancake, butter is placed in the bottom of a 9x13 baking pan. The pan is heated until the butter melts. An easy batter made with eggs, flour, milk and salt is poured into the hot pan. The batter puffs up while baking in the oven. Glazed apples are made by cooking sliced apples in a skillet with brown sugar and apple juice. After removing the puffed pancake from the oven, the glazed apples are placed on top. Powdered sugar is sprinkled on top of the sliced pieces. A sweet and decadent twist on traditional pancakes.

Ingredients

  • 2 tbsp butter
  • 4 eggs
  • cup flour
  • cup milk
  • ¼ tsp salt
  • ½ cup butter cut up
  • 2 medium cooking apples cored, peeled and thinly sliced (~ 2 cups)
  • cup packed brown sugar
  • 2 tbsp light rum or apple juice
  • Powdered sugar

Instructions

  1. Preheat oven to 400 F. Place 2 tbsp butter in 13x9 pan. Place pan in oven 3 to 5 minutes or until butter is melted.
  2. In a bowl beat eggs with a wire whisk. Whisk in flour, milk and salt until smooth. Immediately pour batter into the hot pan. Bake 20 to 25 minutes or until puffed and well browned.
  3. Meanwhile, for glazed apples, in a large skillet melt the ½ cup butter over medium heat, add apples. Cook and stir about 8 minutes or until apples are tender. Stir in brown sugar; cook 1 to 2 minutes or until sauce is smooth, stirring gently. Remove skillet from heat. Carefully stir in rum. Return skillet to heat; heat through.
  4. Serve glazed apples over pancake. Sprinkle with powdered sugar. Serve warm.
