Roasted Honey Ginger BBQ Chicken Strips

I stole this recipe for Roasted Honey Ginger BBQ Chicken Strips from a cookbook called The Chew Approved who stole it from Akilah Abrahms. To make this yummy chicken recipe, start with tossing chicken with oil, salt, pepper and garlic. Roast the chicken in the oven, then brush with a glaze made with honey, barbecue sauce and minced ginger. The chicken bakes in the oven to set the glaze and is served with additional glaze. This sticky chicken recipe can be a main dish or an appetizer.

Preheat oven to 375 F. Line a baking sheet with parchment. Toss 1 lb chicken with 2 tbsp coconut oil, 1 tsp salt, ½ tsp pepper and 2 cloves of minced garlic to coat. (I have the chicken marinate overnight.)

Arrange chicken on prepared baking sheet without overlapping pieces.

Roast in oven 45 minutes. While chicken is in oven make the glaze. Add ½ cup honey, 2 tbsp BBQ sauce, 1 tsp minced fresh ginger and 1 tsp ginger juice in a small bowl.

Combine glaze ingredients with a whisk.

Remove the pan from the oven, split glaze in half. Brush the chicken with half of the glaze mixture, reserving remaining half to serve with finished chicken.

Place chicken back in oven for 10 minutes. Remove and serve with glaze.

Ingredients

Honey Glaze

  • ½ cup honey
  • 2 tbsp BBQ sauce
  • 1 tsp ginger minced
  • 1 tsp ginger juice

Chicken wings

  • 1 lb chicken wings
  • 2 tbsp coconut oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 clove garlic minced

Instructions

  1. Preheat oven to 375 F.
  2. Line a baking sheet with parchment.
  3. Prep glaze ingredients in a small bowl.
  4. Toss chicken with coconut oil, salt, pepper and minced garlic to coat. Arrange chicken on prepared baking sheet without overlapping pieces.
  5. Roast in oven 45 minutes.
  6. Remove from oven, split glaze in half. Brush the wings with half of the glaze mixture, reserving remaining half to serve with finished wings.
  7. Place chicken back in oven for 10 minutes.
  8. Remove and serve with glaze.

I use chicken breasts that I cut into strips, instead of chicken wings.
