I stole this recipe for Slow Cooker Pulled BBQ Beef Sandwiches from a website called livingsweetmoments.com. To make these sandwiches, start with beef chuck roast in a slow cooker. A barbecue sauce is made with Worcestershire sauce, apple cider vinegar, ketchup, bottled barbecue sauce and dried spices. Then the meat cooks on low with the sauce for 6 hours. Remove the beef and shred it, while transferring the sauce to a saucepan to cook it to reduce and thicken. The Slow Cooker Pulled BBQ Beef Sandwiches are made by placing the shredded beef on a bun and pouring sauce on top. You can get the chuck roast at your market of choice.
In a bowl combine 2 tbsp Worcestershire sauce, 2 tsp garlic powder, 1 tsp onion flakes, ½ cups apple cider vinegar, 1 tsp paprika, ½ cup brown sugar, ½ cup ketchup, 1 tbsp dry mustard and ½ bottle BBQ sauce (need 8 oz).
Trim fat from 3 – 4 lbs beef chuck roast, pat dry. Rub salt and pepper all over. Cut into 2-3 pieces. Place sauce in slow cooker and add meat.
Turn the meat so it is coated on all sides.
Cook on LOW 6-8 hours. Remove beef from slow cooker and shred it.
Skim fat from sauce and place liquid in small saucepan over medium low heat.
Simmer sauce 10-20 minutes to reduce and thicken. Transfer shredded beef back into slow cooker, pour thickened sauce on top.
Stir to combine sauce and beef.
Place beef on buns and pour sauce over top.
