I stole this recipe for Breaded Baked Mushrooms from Michelle De La Cerda at Thecompletesavorist.com. Button mushrooms are breaded in Panko bread crumbs, garlic, onion and other seasonings. The breaded mushrooms are then baked in the oven. Panko breadcrumbs give a nice crunch to the mushrooms. These Breaded Baked Mushrooms are great as an appetizer or as a side dish.

Preheat oven to 450 F. Line baking sheet with parchment, remove stems from 16 oz washed mushrooms.
Mix 1 ½ cups panko breadcrumbs, 1 tbsp granulated garlic, ½ tsp onion powder, ½ tsp black pepper, ¾ tsp salt, ¼ cup AP flour and 1 tbsp (heaping) dried parsley in a bowl.
Beat 3 eggs in a small bowl and dip mushrooms in beaten eggs.
Place coated mushroom in the breading.
Roll mushroom to coat evenly with breading.
Place mushroom on baking sheet. Repeat until all are breaded.
Spray mushrooms generously with cooking spray. Bake 7 minutes. Remove from oven and turn each mushroom over, spray again with cooking spray.
Resume baking, an additional 5-8 minutes or until golden.

- 16 oz small button mushrooms
- 3 eggs
Breading
- 1 ½ cups panko breadcrumbs
- 1 tbsp granulated garlic
- ½ tsp onion powder
- ½ tsp black pepper
- ¾ tsp salt
- ¼ cup AP flour
- 1 tbsp heaping dried parsley
- Cooking spray
Instructions

Mix breading ingredients in a bowl.

Beat eggs and dip several mushrooms in at a time.

Roll 3-5 mushrooms at a time in the breading and place on baking sheet.

Repeat until all are breaded.

Spray mushrooms generously with cooking spray.

Bake 7 minutes.

Remove from oven and turn each mushroom over, spray again with cooking spray and resume baking, an additional 5-8 minutes or until golden.
Recipe Notes
I add a few tablespoons of grated Parmesan cheese to breading.
