I stole this recipe from The Taste of Home Cookbook who stole it from Taste of Home Test Kitchen. I was looking for a chicken recipe that was breaded but with more flavor than just the breading. This recipe offers something extra; after the chicken finishes cooking in the oven, honey butter (that’s right, you heard me – honey butter) gets brushed on the top. It is the perfect finishing touch. I used chicken breasts for this recipe, but you can use any form of chicken you prefer.
In a shallow bowl, combine: ¾ cup seasoned bread crumbs, 2 tbsp dried parsley flakes, 1 tsp Italian seasoning, ¾ tsp garlic salt and ½ tsp poultry seasoning.
Stir to combine bread crumb mixture. In another shallow bowl add 1 lightly beaten egg.
Using 1 piece at a time, dip chicken in egg
then coat with bread crumb mixture (there really is a piece of chicken under the pile of bread crumbs)
Repeat with remaining pieces of chicken. In a large skillet over medium heat, cook the chicken in 2 tbsp butter about 3 minutes per side to set the breading.
Then place the chicken on a parchment lined cookie sheet and finish cooking in the oven.
Bake at 350 F for 20 minutes, depending on the size of the chicken it may need more time baking, the juices should run clear for the chicken or until a thermometer reads 165 F.
Meanwhile, combine ¼ cup softened butter and ¼ cup honey. The recipe calls for serving the honey butter on the side. But I brush the honey butter on the chicken when I remove it from the oven.
Serve immediately. You won’t believe how moist and juicy the honey butter makes the chicken.
Herb Chicken with Honey Butter
A juicy breaded chicken recipe that is topped with honey butter when the chicken comes out of the oven. Chicken breasts are breaded in seasoned breading, lightly pan fried then finish cooking in the oven. The honey butter is the special finishing touch, great for company.
Ingredients
Chicken:
- 1 egg lightly beaten
- ¾ cup seasoned bread crumbs

- 1 tsp Italian seasoning

- ½ tsp poultry seasoning
- 4 boneless skinless chicken breast halves (6 oz each)
- 3 tbsp butter
Honey Butter:
- ¼ cup butter, softened
- ¼ cup honey

In a large skillet over medium heat, cook the chicken in butter 4-5 minutes on each side or until a thermometer reads 165 F. Meanwhile, combine softened butter and honey. Serve with chicken.
Recipe Notes
I cook the chicken in the skillet using 1-2 tbsp butter, about 3 minutes per side to set the breading. Then I place the chicken on a parchment lined cookie sheet and finish cooking in the oven. The chicken is less greasy because you can use less butter and by finishing cooking in the oven, you can make sure the chicken is fully cooked without burning the breading. If I am cooking a side dish or another part of the meal in the oven, I adjust the time based on the oven temperature. If I am only cooking the chicken I bake at 350 F for 20-25 minutes or until juices run clear.
