Herb Chicken with Honey Butter

A juicy breaded chicken recipe that is topped with honey butter when the chicken comes out of the oven. Chicken breasts are breaded in seasoned breading, lightly pan fried then finish cooking in the oven. The honey butter is the special finishing touch, great for company.

Ingredients

Chicken:

  • 1 egg lightly beaten
  • ¾ cup seasoned bread crumbs
  • 2 tbsp dried parsley flakes
  • 1 tsp Italian seasoning
  • ¾ tsp garlic salt
  • ½ tsp poultry seasoning
  • 4 boneless skinless chicken breast halves (6 oz each)
  • 3 tbsp butter

Honey Butter:

  • ¼ cup butter, softened
  • ¼ cup honey

Instructions

  1. Place egg in a shallow bow. In another shallow bowl, combine bread crumbs and seasonings. Dip chicken in egg, then coat with bread crumb mixture.
  2. In a large skillet over medium heat, cook the chicken in butter 4-5 minutes on each side or until a thermometer reads 165 F. Meanwhile, combine softened butter and honey. Serve with chicken.

Recipe Notes

I cook the chicken in the skillet using 1-2 tbsp butter, about 3 minutes per side to set the breading. Then I place the chicken on a parchment lined cookie sheet and finish cooking in the oven. The chicken is less greasy because you can use less butter and by finishing cooking in the oven, you can make sure the chicken is fully cooked without burning the breading. If I am cooking a side dish or another part of the meal in the oven, I adjust the time based on the oven temperature. If I am only cooking the chicken I bake at 350 F for 20-25 minutes or until juices run clear.
