I found this recipe in The Taste of Home Cookbook they stole it from Michelle Herren from Las Vegas, NV. I was looking for a change from my regular roasted potatoes. This recipe actually calls for fingerling potatoes, but those are hit or miss at my local grocery store, so I used diced Yukon Gold potatoes instead. The seasoning on the potatoes make them a flavorful change to plain potatoes.
Preheat oven to 425 F. Place 1 lb potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 10 minutes. Drain. Transfer to a greased 15x10x1 baking pan.
Combine 3 tbsp grated Parmesan cheese, 3 tbsp minced fresh parsley, 2 tbsp olive oil, 1 tsp dried rosemary, 1 tbsp melted butter, ¼ tsp salt, ¼ tsp pepper; drizzle over potatoes
Bake, uncovered, 8-10 min or until tender, stirring once.
Serve warm. I served these potatoes with beef tips & caramelized onions casserole.
Spectacular Potatoes
A flavorful well seasoned potato side that's made with fingerling potatoes or any other potato. A fancy, quick and easy alternative to mashed potatoes.
Ingredients
- 1 lb fingerling potatoes
- 3 tbsp grated Parmesan cheese
- 3 tbsp minced fresh parsley
- 2 tbsp olive oil
- 1 tbsp minced fresh rosemary or 1 tsp dried rosemary, crushed
- 1 tbsp butter, melted
- ¼ tsp salt
- ¼ tsp pepper

Recipe Notes
I use cut Yukon gold potatoes, I love fingerling potatoes, but they are hit or miss to find at my grocery store. I leave the skins on, then follow the recipe, the cooking time in the oven may increase 5-10 minutes, check potatoes with a fork.
