Spectacular Potatoes

A flavorful well seasoned potato side that's made with fingerling potatoes or any other potato. A fancy, quick and easy alternative to mashed potatoes.

Ingredients

  • 1 lb fingerling potatoes
  • 3 tbsp grated Parmesan cheese
  • 3 tbsp minced fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp minced fresh rosemary or 1 tsp dried rosemary, crushed
  • 1 tbsp butter, melted
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 425 F. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 10 minutes. Drain. Transfer to a greased 15x10x1 baking pan. Combine the remaining ingredients; drizzle over potatoes and toss to coat. Bake, uncovered, 8-10 min or until tender, stirring once.

Recipe Notes

I use cut Yukon gold potatoes, I love fingerling potatoes, but they are hit or miss to find at my grocery store. I leave the skins on, then follow the recipe, the cooking time in the oven may increase 5-10 minutes, check potatoes with a fork.
