Easy Apple Cake

I stole this recipe from Cottage Life’s Summer Weekend Cookbook which I initially bought for the grilling section and years later I finally looked in the desserts section of the book and found this yummy apple cake. I have been making this easy apple cake a few times a year since I found the recipe. You can use store bought or fresh picked apples.

 

Core, peel and chop 5 medium apples of your choice. Place in a bowl of water, covering the apples, to prevent browning.

Add ⅓ cup sugar and 1 ½ tsp cinnamon to a bowl

Stir to combine, this is for the topping; set aside.

Add 2 cups sugar, 1 cup vegetable oil, 4 eggs, ½ cup orange or apple juice and 1 tbsp vanilla to a bowl.

In a separate bowl, combine 3 cups flour, 1 tbsp baking powder and ½ tsp salt. Stir into egg mixture, mixing until smooth.

Spread half of the batter in a greased 9×13 cake pan.

Arrange apples over top.

Sprinkle half of the topping mixture over apples.

Spread remaining batter over top. Sprinkle with remaining topping. If desired, you can add 1/4 cup chopped pecans or walnuts on top.

Bake at 350 F for 50-60 minutes, or until cake springs back when lightly touched.

Serve warm or cool.

Ingredients

Topping

  • cup sugar

Cake

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • ½ cup orange or apple juice
  • 1 tbsp vanilla
  • 3 cups AP flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 5 medium apples , peeled, cored and chopped

Cake

  1. Beat first 5 ingredients in a large bowl.
  2. In a separate bowl, combine flour, baking powder and salt. Stir into egg mixture, mixing until smooth. Spread half of the batter in a greased 9x13 cake pan. Arrange apples over top. Sprinkle half of the topping mixture over apples. Spread remaining batter over top. Sprinkle with remaining topping.
  3. Bake at 350 F for 50-60 minutes, or until cake springs back when lightly touched. Serve warm or cool.

Recipe Notes

I add ¼ cup chopped pecans in the topping. You can use any apple variety you like; I like this recipe with Granny Smith apples. I cut the apples first and place them in a bowl of water so they don’t brown until I need them. Just drain the apples before using in recipe.
