Easy Apple Cake

Easy anytime dessert cake, layered with apples of your choice. Light, fluffy cake that travels well to a barbecue or potluck.

Ingredients

Topping

  • cup sugar
  • 1 ½ tsp cinnamon

Cake

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • ½ cup orange or apple juice
  • 1 tbsp vanilla
  • 3 cups AP flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 5 medium apples , peeled, cored and chopped

Instructions

Topping

  1. Combine sugar and cinnamon for topping; set aside.

Cake

  1. Beat first 5 ingredients in a large bowl.
  2. In a separate bowl, combine flour, baking powder and salt. Stir into egg mixture, mixing until smooth. Spread half of the batter in a greased 9x13 cake pan. Arrange apples over top. Sprinkle half of the topping mixture over apples. Spread remaining batter over top. Sprinkle with remaining topping.
  3. Bake at 350 F for 50-60 minutes, or until cake springs back when lightly touched. Serve warm or cool.

Recipe Notes

I add ¼ cup chopped pecans in the topping. You can use any apple variety you like; I like this recipe with Granny Smith apples. I cut the apples first and place them in a bowl of water so they don’t brown until I need them. Just drain the apples before using in recipe.
