Steak & Queso Rice

I stole this recipe for Steak & Queso Rice from thatovenfeelin.com. This dinner recipe is quick and easy to make. Rice is added to a skillet with onions and garlic. Then chicken broth and tomato sauce are added and cooked at a simmer until the liquid is absorbed and the rice is tender. Next the cooked rice is fluffed before serving on a platter. Cooked and sliced steak is served on top of the rice with cheese. You can serve the steak cooked as desired, just make sure you cook it first.

The ingredients for this recipe are: 1 cup long grain white rice, 2 tbsp olive oil, 1 small onion, 1 tbsp minced garlic, 2 cups chicken broth, 8 oz tomato sauce, ½ tsp salt, ½ tsp pepper, 1 tsp ground cumin, 1 tsp dried cilantro, 1 lb sirloin steak, 2 tbsp butter and white queso

Heat the olive oil in a large skillet over medium heat. Once hot, add the rice and stir continuously until it begins to brown slightly, ensuring it does not burn.

Then add the chopped onion and garlic into the skillet, sauté on medium low heat until the onion is translucent.

Pour the chicken broth and tomato sauce into the skillet with the rice.

Stir thoroughly until well mixed. Bring the mixture to a brisk boil, then allow it to boil for 2 minutes. Reduce heat to low, cover the skillet and let the rice simmer for 20 minutes, until the liquid is absorbed and the rice is tender.

In another large skillet melt the butter over medium-high heat. Add the steak to the skillet, seasoning generously with Montreal steak seasoning.

Cook the steak, flipping occasionally, until the steak reaches desired level of doneness. Remove the steak from the skillet.

Once the rice is cooked, turn off the heat but keep the lid on the skillet. Keep the rice covered for an additional 10 minutes.

Slice the rested steak.

Fluff the rice gently with a fork and add some of the cheese.

Serve by placing some of the rice in a bowl or tortilla bowl.

Then add some of the sliced steak.

Next add additional cheese.

Top with salsa if desired.

  6. To serve, fluff the rice gently with a fork and arrange on a serving platter. Layer the cooked steak over the rice, then drizzle with White Queso over steak and rice.
