Ranch Garlic Parmesan Chicken Skewers

I stole this recipe for Ranch Garlic Parmesan Chicken Skewers from badbatchbaking.com. This recipe is perfect for Labor Day grilling. First a seasoning mix is made with dry ranch seasoning, dried dill, paprika, garlic powder, onion powder, salt and pepper. Then chopped chicken is rubbed with the seasoning mix and placed on skewers. Next a sauce is made with butter, garlic, Parmesan cheese, parsley, dry ranch seasoning, dried dill and onion powder. Chicken is grilled while being basted with the sauce. Once finished cooked additional Parmesan cheese is sprinkled on top. This tasty recipe is a great option for end of season summer grilling.

The ingredients for this recipe are: 2 lbs chicken thighs or breasts, 2 tbsp olive oil, Wooden skewers, 1 stick butter, 8 to 10 cloves minced garlic, ½ cup grated Parmesan cheese, ⅓ cup minced fresh parsley, 2 tbsp + 1 ½ tsp dry ranch seasoning, 2 tsp dried dill, 1 + ½ tsp onion powder, 2 tsp paprika, 1 tsp garlic powder, ½ tsp salt and ½ tsp pepper

Combine 1 tbsp + 1 ½ tsp dry ranch seasoning, 1 tsp dried dill, paprika, garlic powder, 1 tsp onion powder, salt and pepper in a small bowl and set aside.

Make the sauce by adding the butter and garlic in a microwave safe bowl and heat until partially melted. Then add in parsley, 1 tbsp dry ranch seasoning, 1 tsp dried dill, ½ tsp onion powder and Parmesan cheese.

Whisk together until combined.

Cut chicken into 3” pieces. Place in a large bowl or plastic bag and toss in olive oil and then in the spices, coating well on all sides.

Place the chicken onto each skewer, making sure they are tightly packed with no spaces between to ensure maximum juiciness. Preheat grill to medium-high heat. Place the skewers on direct heat.

Then cook each side for 5 to 6 minutes. Basting throughout the cooking process.

Continue cooking and basting each time the chicken is turned.

Remove from grill and baste with remaining sauce and additional Parmesan cheese.

Serve warm and enjoy.

Ingredients

  • 2 lbs chicken thighs or breasts

Garlic Parmesan Butter Sauce

  • 1 stick butter
  • 8 to 10 cloves minced garlic
  • ½ cup grated Parmesan cheese
  • 1 tbsp hot sauce optional
  • 2 tsp red pepper flakes optional
  • cup minced fresh parsley
  • 1 tbsp dry ranch seasoning
  • 1 tsp dried dill
  • ½ tsp onion powder

Chicken seasoning

  • 1 tbsp + 1 ½ tsp dry ranch seasoning
  • 1 tsp dried dill
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Prep and Skewer chicken

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Combine chicken seasoning mixture in a small bowl and set aside.
  3. Cut chicken into 3” pieces. Place in a large bowl and toss in olive oil and then in the spices, coating well on all sides.
  4. Place the chicken onto each skewer, making sure they are tightly packed with no spaces between to ensure maximum juiciness.

Garlic Parmesan Butter Sauce

  1. Add the butter and garlic in a microwave safe bowl and heat until partially melted. Then add in the red pepper flakes, hot sauce, seasonings and Parmesan cheese. Whisk together until combined. (If sauce separated, add 1 to 2 tbsp softened butter and stir to re-emulsify.)
  2. Scoop out ⅓ of the sauce and use for basting while cooking the chicken. Reserve the remaining sauce for brushing on the cooked chicken when serving.

Air Fryer

  1. Cook 2 to 3 skewers at a time. Cook at 400 F for 5 minutes. Remove and flip the skewers, baste with sauce, return to cook for an additional 2 minutes.
  2. Flip again and baste with more sauce cook another 5 to 6 minutes or until internal temperature reaches 165 F. Total cook time will be 12 to 14 minutes.

Oven

  1. Preheat oven to 450 F. Place the skewers on a rimmed baking sheet lined with foil and cook for 14 minutes, flipping halfway through and basting with butter a few times throughout the cooking process.
  2. Switch to broil and cook for 2 minutes to cook until the tops are golden brown.

Grilling

  1. Preheat grill to medium-high heat. Place the skewers on direct heat and cook each side for 5 to 6 minutes. Basting throughout the cooking process. Remove from grill and baste with reserved sauce, sprinkle with additional Parmesan cheese.
