Lemon Cheesecake Bars

I stole this recipe for Lemon Cheesecake Bars from deliciouslyseasoned.com. These delicious lemon cheesecake bars look fancy but are easy to make. First graham cracker crumbs, butter and sugar are mixed together. Then pressed into the bottom of a baking dish. Next cream cheese and butter are mixed together before adding sour cream, vanilla extract and lemon extract. Eggs are added before pouring over the crust in the pan. The bars are baked in the oven, then cooled and refrigerated several hours. Lemon pie filling is spread over the cheesecake layer before serving. These lemon cheesecake bars can be eaten at home or taken to go.

The ingredients for this recipe are: 1 ¼ cups graham cracker crumbs, ½ cup butter, 1 ¼ cup sugar, 24 oz cream cheese, 1 cup sour cream, 1 tsp vanilla extract, 1 tsp lemon extract, 3 large eggs and 21 oz can lemon pie filling

In a medium bowl melt the butter.

Add graham cracker crumbs and ¼ cup sugar together, stir until combined.

Then press into 9×13 baking pan.

Next in a large bowl beat cream cheese and 1 cup sugar together for 2 to 3 minutes or until smooth.

Add sour cream, vanilla extract and lemon extract and beat until combined.

Next add eggs, 1 at a time, mixing on low until just blended. Pour over crust.

Bake in preheated oven at 350 F for 45 to 50 minutes or until the center is almost set and still a little jiggly.

Remove from oven and let sit to cool. Once cool enough, place in refrigerator for 4 hours or overnight before serving. Then add lemon pie filling at top of the cheesecake layer.

Gently spread out the lemon pie filling evenly on top.

Slice and serve.

Top with whipped cream if desired.
