Kinda Sorta Chicken Alfredo

I stole this recipe for Kinda Sorta Chicken Alfredo from a cookbook called Keep it Simple Y’all. This pasta tastes just like Chicken Alfredo and is easy enough to make for a weeknight meal. Chicken is seasoned with salt, pepper and paprika then sautéed in a skillet. The chicken is removed from the skillet before adding garlic, chicken stock, heavy cream and seasonings. Once the sauce is simmering, fettuccine noodles are added. Then the pasta is cooked in the sauce before adding cheese and broccoli. Next the chicken is sliced and served over the pasta, broccoli and sauce. Because the broccoli is chopped before it is added with the pasta and sauce, kids can’t complain about different pieces.

The ingredients for this recipe are: 4 to 5 thin sliced chicken breasts, salt and pepper, paprika, 2 tbsp olive oil, garlic, 1 ½ cups chicken stock, 1 ½ cups heavy cream, 1 tsp garlic powder, 1 tsp onion powder, 2 tsp Italian seasoning, 8 oz fettuccine pasta, 12 oz to 24 oz package frozen, broccoli florets and 5 oz to 10 oz soft cheese (Goat cheese / Boursin / Alouette)

Season chicken with salt, pepper and paprika. In a wide pan over medium-high heat, add the oil then add the chicken.

Sauté the chicken until browned and cooked through (thin slices should take 3 to 5 minutes each side). Remove the chicken to a separate plate and set aside.

Turn the heat to medium-low. Add the garlic to pan, cook for 1 minute, until fragrant.

Then add chicken stock, cream and seasonings. Stir together and cook until it comes back to a simmer.

Turn heat to low simmer, add the fettuccine.

Cover and cook for 10 to 12 minutes, stirring occasionally until pasta is tender. While the pasta is cooking, steam broccoli in microwave according to package. When the pasta is done, add the cheese and stir until fully melted and combined.

Stir in the broccoli.

Slice the chicken breasts on the bias, against the grain and serve over the pasta.
