I stole this recipe for Upside Down Puff Pastry Squares with Broccoli & Cheddar from xoandso.com. This fancy looking recipe is actually very easy to make. Shredded cheddar cheese, chopped broccoli, onion and spices are mixed together in a bowl. Then puff pastry is rolled out and 9 pieces. Next the broccoli mixture is placed onto a parchment paper lined baking sheet. The puff pastry pieces are placed on top of broccoli mixture. Then the pastry is pressed down and scored on all the edges. After brushing with an egg wash, the squares are baked until brown and crispy. Briefly let the squares cool and then flip them over before serving. This broccoli recipe is a delicious way to eat more vegetables.
The ingredients for this recipe are: 1 sheet puff pastry, 1 cup cheddar cheese, 1 cup broccoli florets, ¼ cup red onion, ¼ tsp onion powder, ¼ tsp garlic powder, ¼ tsp salt, pepper, olive oil, 1 egg and 1 tbsp water
In a bowl add finely chopped broccoli, onions, garlic powder, onion powder, Italian seasoning, salt and pepper.
Then add shredded cheddar cheese.
Place the filling mixture in 9 piles (3 rows of 3) on the lightly greased baking sheet lined with parchment paper.
Then take the defrosted puff pastry and very gently roll with a rolling pin on a lightly floured surface. Flatten slightly and smooth out then cut into 9 equal size pieces with a pizza cutter.
Place each square of puff pastry over the filling portions on the baking sheet. With a fork, gently score and press down the edges of all four sides of each puff pastry square. Whisk the egg with water. Lightly brush the top of each puff pastry square with the egg wash.
Bake at 375 F for 15 to 20 minutes, or until the top of the puff pastry is just golden brown and crispy.
Let them sit for a few minutes to cool, then use a spatula to lift them off the baking sheet. Serve hot.
Serve broccoli side up if you prefer.

Line a baking sheet with parchment paper. Very lightly grease the parchment paper with olive oil, use a pastry brush to cover completely. Set aside.
