I stole this recipe for Cranberry Brie Bites from thecountrycook.net. These delicious appetizers are perfect for Thanksgiving. Canned crescent dough is rolled out and cut into 24 squares. Then the dough pieces are pressed into mini muffin tins. Next a wheel of brie is cut into small pieces and placed into the dough cups with chopped cranberries and pecans. The pans are baked in the oven until the crescent dough is light golden brown. These delicious appetizers are served warm and perfect for any holiday gathering.
Spread a little flour onto the counter. Then roll out an 8 oz can of crescent dough sheet. If using crescent rolls, pinch the seams together to make one long sheet.
Cut crescent roll dough into 24 equal-sized squares.
Spray a mini muffin tin with cooking spray. Place dough squares into muffin tin slots.
Unwrap an 8 oz wheel of brie cheese then cut into small pieces.
Add the brie pieces to the dough in the muffin tins.
Top with chopped dried cranberries or cranberry sauce.
Then add chopped pecans.
Bake until the crescent dough is a light golden brown (about 15 minutes).
Then serve warm and enjoy!

Ingredients
- flour for dusting the dough and cutting board
- 8 oz crescent dough sheet or crescent rolls
- 8 oz wheel of brie cheese
- 1 cup whole berry cranberry sauce
- ¼ cup chopped pecans
- Fresh rosemary sprigs

Preheat oven to 375 F. Spray a mini muffin tin with cooking spray. Spread a little flour onto the counter. Then roll out crescent dough sheet. If using crescent rolls, pinch the seams together to make one long sheet.

Cut brie into small pieces and place inside the crescent dough squares. Top with generous spoonful of cranberry sauce, some pecans and a little sprig of rosemary.
