Overnight Birthday Cake French Toast Casserole

I stole this recipe for Overnight Birthday Cake French Toast Casserole from lifeloveandsugar.com. This yummy breakfast casserole is made for birthdays but can be made for any special occasion by changing the colors of the sprinkles. A loaf of French bread is cut into chunks and placed in a baking dish. Then eggs, milk, cream, funfetti cake mix, cinnamon and vanilla are mixed together and poured over the bread. Next sprinkles are go on top before covering and refrigerating overnight. The casserole is baked for 30 minutes before adding a streusel made with butter and funfetti cake mix. Then the casserole continues baking until it is golden brown. Frosting is melted and served over the casserole with additional sprinkles. The ingredients for this recipe are: 1 loaf sourdough or French bread, 8 large eggs, 2 ½ cups milk, ½ cup heavy whipping cream, 2 cups Funfetti cake mix, 2 tsp ground cinnamon, 2 tsp vanilla extract, 5 tbsp sprinkles, 1 cup Funfetti cake mix and ½ cup butter

Cut the bread into chunks, then add to a large bowl and set aside.

In another large bowl, whisk together the eggs, milk, cream, cake mix, cinnamon and vanilla extract.

Pour the egg mixture over the bread chunks, then gently stir to combine.

Pour the bread mixture into the prepared casserole dish and spread evenly. Spread the sprinkles evenly over top of the casserole. Cover the casserole and store in the refrigerator overnight.

When ready to bake the casserole, preheat the oven to 350 F. Bake the casserole for about 25 to 30 minutes. While the casserole bakes, cut the additional cake mix into the butter until it’s crumbly.

Remove the casserole from the oven and crumble the streusel over the top of the casserole.

Continue baking the casserole for another 10 to 25 minutes, or until it’s at your desired level of doneness.

Slice the casserole into pieces.

If using frosting, add some to a microwavable bowl and melt until pourable. Serve the casserole warm with frosting or syrup and additional sprinkles if desired.
