I stole this recipe for Maple Glazed Apple Blondies from alattefood.com. These apple blondies are perfect for fall! Chopped apples are cooked in a saucepan with brown sugar, butter, vanilla extract and cinnamon. Then the batter is made with butter, sugar, eggs, salt, vanilla, flour, baking powder and cinnamon. Half of the batter is spread into a baking dish, then the apple filling is spread on top before adding the remaining batter. The blondies are baked and cooled. Then a maple glaze is made with butter, maple syrup, vanilla, cinnamon and powdered sugar. Next the glaze is poured over the cooled bars. This recipe is great way to use freshly picked apples, if there any left to buy.
The ingredients for the bars are: 2 cups AP flour, 1 tsp baking powder, ½ tsp salt, 1 cup butter, ¼ cup granulated sugar, 1 cup dark brown sugar, 2 large eggs, 1 ½ tsp vanilla extract, ½ tsp cinnamon.
In a sauce pan add: 2 chopped large apples, 2 tbsp brown sugar, 1 tbsp butter, ½ tsp vanilla extract and ½ tsp cinnamon.
On medium-low heat, cook the apple filling for 3 to 4 minutes. Remove from heat and allow to cool.
In a large bowl cream butter until light and fluffy, about 1 minute. Add in the brown sugar and granulated sugar, and mix until well combined.
Then add in eggs, 1 at a time, beating well after each addition. Add in salt and vanilla extract. Mix until combined.
In a separate bowl mix the flour, baking powder and cinnamon together.
Next add to the wet ingredients and stir until combined.
In the bottom of an 11×7 baking pan lined with foil (or spray pan with cooking spray), spread half the blondie batter evenly, using a spatula. Batter is very thick. Spread apple filling all over the layer.
Top with remaining batter and spread evenly.
Bake at 350 F for 25 to 30 minutes or until top is golden brown and a cake tester comes out clean.
The ingredients for the maple glaze are: 2 tbsp butter, ¼ cup pure maple syrup, ½ cup powdered sugar, ¼ tsp vanilla extract and ⅛ tsp ground cinnamon
Melt the butter, maple syrup, vanilla extract and cinnamon over low heat. Once melted together, remove from heat.
Stir in the powdered sugar and whisk until fully combined.
Allow to cool for 8 to 10 minutes so the glaze can thicken. Allow the bars to cool for 10 minutes, then pour the glaze over the bars and allow it to set.
Slice into squares and enjoy!
