Garlic Parmesan Chicken Skewers

I stole this recipe for Garlic Parmesan Chicken Skewers from badbatchbaking.com. This recipe is perfect for Labor Day grilling. Chopped chicken is seasoned with paprika, garlic powder, onion powder, salt and pepper. Then the chicken is placed on skewers. Next a basting sauce is made with butter, garlic, Parmesan cheese, red pepper flakes and fresh parsley. The chicken is grilled while being basted with the sauce. Once the chicken is cooked, the remaining sauce is brushed on the chicken and sprinkled with Parmesan cheese. This chicken smells so good while grilling, neighbors will want you to share.

The ingredients for this recipe are: 2 lb chicken tenders, 2 tbsp olive oil, 1 stick butter, 8 to 10 cloves of garlic, ½ cup grated Parmesan, 2 tsp red pepper flakes, ⅓ cup fresh parsley, 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt and ½ tsp pepper

Mince the parsley and set aside.

Combine chicken seasoning ingredients in a small bowl and set aside. Cut chicken into 3” pieces. Toss the chicken with olive oil, then with spices, coating well on all sides. Pack the chicken on each skewers, making sure they are tightly packed with no space in between pieces.

Then add the butter and garlic in a microwave-safe bowl and heat until partially melted. Add in red pepper flakes, hot sauce, parsley and Parmesan. Whisk together until combined.

Preheat grill to medium high heat. Place the prepared skewers over direct heat.

Next cook each side for 5 to 6 minutes each, basting with the butter sauce throughout the cooking process.

Remove from grill and baste it one last time with the butter sauce and sprinkle with leftover Parmesan.

Ingredients

  • 2 lb chicken tenders thighs or breast
  • 2 tbsp olive oil

Garlic Parmesan Butter Sauce

  • 1 stick butter
  • 8 to 10 cloves of garlic minced
  • ½ cup Parmesan grated
  • 1 tbsp hot sauce
  • 2 tsp red pepper flakes
  • cup fresh parsley minced

Chicken Seasoning

  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Prep Chicken

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Combine chicken seasoning ingredients in a small bowl and set aside. Cut chicken into 3” pieces. Toss the chicken with olive oil, then with spices, coating well on all sides.
  3. Pack the chicken on each skewers, making sure they are tightly packed with no space in between pieces.

Make the sauce

  1. Add the butter and garlic in a microwave-safe bowl and heat until partially melted. Add in red pepper flakes, hot sauce, parsley and Parmesan. Whisk together until combined. If the sauce separates, add 1 to 2 tbsp soften butter and stir to re-emulsify.

  2. Set aside ⅓ of the sauce for basting. Leave the rest of the sauce for serving.

Cook the Chicken

Air Fryer

  1. Cook 2 to 3 skewers at a time at 400 F for 5 minutes. Remove and flip the skewers, baste with sauce, return to cook an additional 2 minutes.
  2. Flip again, baste with more sauce and cook for another 5 to 6 minutes or internal temperature reaches 165 F. Total cook time will be 12 to 14 minutes.

Oven

  1. Preheat oven to 450 F. Place the chicken skewers on a rimmed baking sheet lined with foil and cook for 14 minutes, flipping half way through and basting with butter a few times throughout the baking process.
  2. Switch oven to broil and cook an additional 2 minutes so the tops get golden brown.

Grill Preparation

  1. Preheat grill to medium high heat. Place the prepared skewers over direct heat and cook each side for 5 to 6 minutes each, basting with the butter sauce throughout the cooking process.
  2. Remove from grill and baste it one last time with the butter sauce and sprinkle with leftover Parmesan.
