I stole this recipe for Grilled Mozzarella Sandwich from feelgoodfoodie.net. This sandwich is a fancy grilled cheese sandwich. Pesto is spread onto sliced bread. Then sliced fresh mozzarella cheese, sliced tomatoes and sun-dried tomatoes are placed on top. Next another piece of bread is placed on top to finish the sandwich. The sandwich is placed in a Panini maker and cooked for 2 to 3 minutes, or until the cheese is melted. Slice the sandwich anyway you want before serving.
The ingredients for this recipe are: 4 slices sourdough bread, 4 oz mozzarella cheese, 1 large tomato, 2 oz sun-dried tomatoes and pesto
If using grape or cherry tomatoes, sliced in half.
Then place the tomatoes in a skillet and drizzle with olive oil, balsamic vinegar and spices. Cook until the tomatoes start to break from the skins.
Finely chop the jarred sun-dried tomatoes.
Then slice the mozzarella cheese into even pieces.
Assemble the sandwiches, by spreading some pesto onto the bread. Then place the mozzarella cheese, sliced tomatoes and sun-dried tomatoes on top of the bread.
Make more sandwiches using the remaining ingredients.
Place each sandwich onto a preheated Panini maker.
Close the Panini maker and cook for 2 to 3 minutes or until the cheese is melted.
Slice and enjoy!

Grilled Mozzarella Sandwich
Ingredients
- 4 slices sourdough bread
- 4 oz mozzarella cheese sliced
- 1 large tomato sliced
- 2 oz sun-dried tomatoes jarred
Pesto
- ½ cup fresh basil leaves
- 2 cloves garlic cloves peeled
- 2 tbsp walnuts
- 2 tbsp grated Parmesan cheese
- Salt and pepper
- ¼ cup olive oil
Instructions

Place the basil, garlic, walnuts and Parmesan cheese in a food processor, season with salt and pepper, to taste and blend. While the food processor is on, pour the olive oil slowly into the mixture in order to allow the olive oil to emulsify.

Spread the pesto equally on the slices of bread and place two slices of bread on Panini maker for 2 minutes.

Then place the mozzarella cheese, sliced tomatoes and sun-dried tomatoes on top of the bread slices and allow the cheese to melt and the veggies to soften, keeping the panini maker open.

Once the cheese starts to melt, add the second slices of bread on top to close the sandwiches, then close the Panini maker for 2 to 3 minutes.

Remove and slice in half and serve.
Recipe Notes
Jarred pesto can be used for convenience. The sandwiches can also be grilled in a skillet if you don’t have a Panini maker.
