I stole this recipe for Chicken Souvlaki from willcookforsmiles.com. This recipe is another delicious recipe to grill this summer. First a homemade tzatziki sauce is made with cucumbers, yogurt, garlic, olive oil, lemon juice & spices. The sauce is refrigerated until ready to serve. Chicken is cubed and marinated. Then the chicken is placed on skewers and grilled. Next the cooked chicken is served in a pita with onions, tomatoes, cucumbers and the tzatziki sauce. This recipe is so tasty no one should ask for something else to eat.
The ingredients for the tzatziki sauce are: 1 lb whole milk Greek yogurt, 1 medium cucumber, 1 to 2 garlic cloves, ¼ cup olive oil, 2 tbsp lemon juice, 1 tbsp white wine vinegar, 2 tbsp fresh minced dill weed, 1 tbsp fresh minced mint, salt and pepper
Half the cucumbers, scoop out the seeds. Grate cucumber, then mix with salt and let sit in a colander for 10 minutes to drain.
Combine the sauce ingredients except the cucumbers.
Whisk well to combine, then add in the drained cucumbers.
Cover and refrigerate for 3 to 4 days.
For the marinade combine: ½ cup vegetable or olive oil, 3 tbsp white wine vinegar, 2 juiced lemons, 6 garlic cloves, 3 tbsp fresh minced dill, 3 tbsp fresh minced parsley, 2 tsp dried oregano, 1 to 1 ½ tsp salt and ½ tsp black pepper
Cut 2 lbs chicken into 1 inch cubes and add to a zip-top bag. Then add the marinade and mix to make sure chicken is coated well. Let the chicken marinate for 2 hours or overnight in the refrigerator.
While the chicken marinates, slice the tomatoes, cucumbers & onions.
Preheat grill to medium-high heat. Skewer the chicken, fitting 4 to 5 pieces onto each skewer. Place the chicken on the grill.
Grill the chicken for 4 to 5 minutes per side, turning a quarter of the way each time.
Total cooking time is 16 to 20 minutes.
To serve, spread the tzatziki sauce on pita bread, then add the chicken.
Next add the onions, cucumbers & tomatoes. Add more tzatziki sauce if desired.

Ingredients
- 2 lbs chicken breasts about 4
Marinade
- ½ cup vegetable or olive oil
- 3 tbsp white wine vinegar
- 2 lemons juiced
- 6 garlic cloves smashed
- 3 tbsp fresh minced dill
- 3 tbsp fresh minced parsley
- 2 tsp dried oregano
- 1 to 1 ½ tsp salt
- ½ tsp black pepper
- 6 to 8 Greek pitas warmed
- 2 tomatoes sliced
- ½ red onion thinly sliced
- 1 cucumber halved and thinly sliced
Tzatziki Sauce
- 1 lb whole milk Greek yogurt
- 10 to 12 oz cucumber 1 medium
- 1 to 2 garlic cloves minced
- ¼ cup olive oil
- 2 tbsp lemon juice
- 1 tbsp white wine vinegar
- 2 tbsp fresh minced dill weed 1 tbsp dried
- 1 tbsp fresh minced mint 1 ½ tsp dried
- Salt
- Pepper

Tzatziki

Half the cucumbers, scoop out the seeds. Grate cucumber, then mix with salt and let sit in a colander for 10 minutes to drain.

Squeeze water from cucumber. Combine all ingredients.

Cover and refrigerate for 3 to 4 days.
Marinade

Combine ingredients for the marinade and whisk well. Taste to see if more salt is needed.

Cut the chicken into 1 inch cubes and add to a zip-top bag. Add the marinade and mix to make sure chicken is coated well.

Let the chicken marinate for 2 hours or overnight in the refrigerator. If using wooden skewers, soak in water while the chicken marinates.
Cooking

Preheat grill to medium-high heat.

Skewer the chicken, fitting 4 to 5 pieces onto each skewer.

Grill the chicken for 4 to 5 minutes per side, turning a quarter of the way each time. Total time is 16 to 20 minutes.

Brush pitas with olive oil and place on grill until heated through.

To serve, top each warm pita with grilled chicken, onions, tomatoes, cucumbers and tzatziki sauce.
