Halloween Whoopie Pies

I stole this recipe for Halloween Whoopie Pies from deliciouslittlebites.com. This Halloween treat starts with boxed cake mix. Devil’s food cake mix is combined with water, oil, eggs and chocolate pudding mix. The batter is scooped onto a lined baking sheet. Once the batter circles are baked and cooled, the whoopie pies are filled with colored cake icing. Decorative sprinkles can be pressed into the edges before serving. These whoopie pies are a tasty, festive treat for a party or your trick-or-treaters. Even for the ones upset about Halloween being on a weekday.

Combine 15.25 oz box devil’s food cake mix, ¾ cup water, ½ cup vegetable oil, 3 eggs and 4 serving box chocolate fudge pudding in a large mixing bowl.

Then beat with an electric mixer until well blended.

Next using a cookie scoop, place the batter onto lined baking sheets. (For smaller whoopie pies, make 36 batter circles to make 18 pies.) Bake at 350 F for 7 to 10 minutes, depending on the size of the pies.

While the batter circles cool, make the filling. In a mixing bowl add 2 x (16 oz) tubs vanilla cake icing and orange food coloring gel. (Or use red and yellow to make the orange shade you want.) Then beat with an electric mixer.

After the batter circles are fully cooled, flip half of them over. Then pipe the colored icing on top of the flipped batter circles.

Next, place a batter circle on top to make a whoopie pie. If you want to add sprinkles, pour some on a plate and then roll the edges in the sprinkles.

Enjoy your tasty Halloween treat!
